Cafe Aion, you rock my world.

i can't believe i haven't posted this yet! a while back Greg and i traveled to The Hill to discover a rumored "Champion of Brunch." fortunately, the original plan for said restaurant was sideswiped when it was closed & Cafe Aion was ahaaaa-opened.
when i took this picture below (Greg says it's the best coffee he's ever had) i didn't even have this blog in mind. my little project "hello boulder" actually began right here at Cafe Aion, during a DELICIOUS brunch on an incredibly sunny day. I snapped this shot because i was so overwhelmed by the ambiance & soon realized i had to share these beautiful parts of Boulder with friends. thank you Cafe Aion, for being my muse. and friends, please do stop by & see them sometime. the staff is just as amazing as the atmosphere.

farmer's market days are here again!

court's BanOatNut smoothie

get adventurous and add more of one or the other, they're allllll delicious in excess.
or, add some chocolate, swap peanut for almond butter, add protein mix, trade almond milk for soy or coconut... the possibilities are endless!
i loooooove this smoothie all year, especially before a hike or run in the canyon. enjoy!
1. naturally more- ammmmmmazing peanut butter introduced by my brother, for which i'm forever thankful.
2. almond breeze- the unsweetened vanilla is my favorite, only 40 calories per serving!
3. ninja- the food processor of the universe : )

sunday brunch--the Walnut Cafe

one thing i always look forward to on a Sunday "morning" is the tradition & love found in the delicious dishes at the Walnut Cafe. it's nestled in a little shopping center off of 30th & walnut, so you can stare lovingly at the Flatirons while you cherish every bite. they're also espresso heaven, so grab a shot- orrrrr they also have Bhakti Chai!

the service at the Walnut is friendly, yet fancy free. go easy on the wait too, this place is so good it's worth it.
i also love that they put blankets out on the patio for people like me who live in the paradox of : "oh, it would be delightful to sit outside & eat /// but dangit-- i hate shivering while i'm trying to be in the moment."

hey fellow veggie lovers! they also have a special part of the menu dedicated to "Boulder Fare" which is pretty much vegetarian,vegan, gluten-free, or all 3. it's nice to start your Sunday off with options!

on the Left: i had the "plain jane omelet" with avocado, mushrooms and spinach {draped in the courtesy patio blanket} and right: Greg had the Big Dill Eggs ... each comes with two sides! hop straight to the menus

i join fellow Boulderites in the land of tofu noms

although Pescetarianism was delightful, i'm officially taking the plunge into vegetarian land today! this decision has been in my radar for a while, but my lovely friends at the Boulder Humane Society finally helped me make my move. i feel confident to begin my veggie lifestyle here in Boulder because this community knows how to get down on some delicious vegetarian recipes!

rio margaritas, sail me away on an ocean of tequila nights! when i first moved here i heard there was a limit of 3, and thought they were joking. no bull; they're powerful, delicious, & their rooftop boasts some of the best views in downtown Boulder. i would totally be dating a Rio marg if i was a quesadilla (or some other mexican pairing).

Rocky Mountain Chocolate Factory, of course! this particular location in Grand Lake, Colorado is my favorite. you can find them all over, but they also have one @ DIA so you can grab a perfect souvenir before leaving Colorado.
